All on the topic of pizza. Interesting for its problematic, which could sometimes resemble and question the new place that olive oil is taking in international food practices. Thesis in two parts: Part 1: From Paese pizza to its nationalised forms (pizza in Italy, its origins; from an ethnic identity marker to the emergence of a multimodal interface, examples from Marseille and the United States; the ‘Thirty Glorious Years’ of pizza; a process of reappropriation brought to a successful conclusion). Part 2: American pizza in France: a comparison of two nationalised pizza models (the commercial organisation of the pizza market in France; Nantes-Besançon, the Maginot Line of pizza).
