Olive oil & hydrolic oil mills in Provence

To be interested in the functioning of hydraulic oil mills. To know how the ancients knew how to adapt to the first beginnings of the technique, to invent simple and clever processes to obtain this marvellous product which is olive oil. This is the aim of the author, Max Lambert, a member of the Var olive growers’ union and also a hydraulic engineer, who wants to share with each reader his passion for olive oil and for a production technique that was used in Provence throughout the 20th century.
