The total triumph of the market economy over the subsistence economy, cultural intermingling and the development of the information media are imposing an almost identical set of living conditions and, consequently, uniform eating habits. When it comes to food, are we on the way to a universal model? The perception of the dangers inherent in the standardisation of dietary habits on a global scale has, in recent years, given rise to a vast movement of historical, sociological and anthropological interest in the question of food.
