What do Tunisians eat? How has their cuisine evolved since Roman colonisation? These are just some of the questions that the author, as an ethnologist, sets out to answer. After taking stock of the food, the author describes the techniques used to process and consume it, followed by a historical section on the evolution of this cuisine since Antiquity.
