Two series of lectures taught at the Collège de France by Jean-Pierre Brun, archaeologist, holder of the chair of Techniques and Economies of the Ancient Mediterranean, on the history of olive oil, from the harvesting of the olive to its production and various uses. Jean-Pierre Brun uses the extent of current archaeological discoveries to support his research.
