The first part of this thesis presents olive oil in its historical context. The second part is devoted to the presentation of the botanical aspect of the olive tree, its geographical distribution, the method of obtaining olive oil and the composition of this oil and of the olive. The third part is a study presenting the potential of olive oil in the prevention of cardiovascular risk factors. The fourth part presents the other protective effects of olive oil. The fifth part provides an introduction to olive oil consumption advice to be given in pharmacies
