Ancient olive growing in Provence, oil mills in the Var department

A comparison of archaeological findings and documentary information has led to a new interpretation of certain texts, in particular those by Cato; it has enabled us to draw up a typology of mills and presses, and to identify the development of olive production in the eastern Narbonne region.
